Hi, I've been doing a lot of experimentation with your cola recipe in the last few weeks.
If you're interested in improving the flavor you need to cut the amount of 7x flavoring
you use in the recipe in half (5 mL) and add kola nut extract (15mL) and vanillin (5mL) at
the concentrate stage. This produces a much more drinkable beverage. I've also gotten
positive results using a combination of citric acid, malic acid and tartaric acid (all
bought at local homebrew supply store) rather than just citric acid on it's own. I haven't
tried phosphoric because I personally don't like it.

cool - thanks for the advice, we have some labs scheduled for early july, will test out
some of these options. could you let us know where you are located / where you're getting
the kola nut extract from? & would it be ok if we publish your comments on our website at
some point.

It's a little on the expensive side, ultimately I think it'd be cheaper to make my own
extract. It would add a few dollars to the price of the concentrate but you're saving some
money by using half as much flavoring. You can get cola nut powder to make an extract with
here:

I'm also looking into the idea of using guarana seed extract or green coffee bean extract
to substitute some or all of the cola nut extract since they're less expensive. I'm
